Become a storyteller whose prose is local and sustainable foods, both grown in gardens and wild harvested. Elevate foraging and horticulture to a new level: from earth to table. Get hands-on experience while training with our Guild Chef through a worldly spectrum of cooking techniques, principles and theories.

The Apprenticeship

The Trackers Chef Apprenticeship immerses you in many cooking traditions while charting a new path for a wilder culinary culture:

Wild Foraging: Plants & More
Chef Apprentices learn about true subsistence foraging and preservation, harvesting from Fall to Spring. They explore the flavors of local wild edible plants along with seafood, meats and fungi. We journey into a world where wild plants run through our gardens and our gardens grow through the wild forest.

Cooking Technique & Safety
We explore a diverse, colorful and flavorful world of cooking techniques throughout history and the world. Every Chef Apprentice gets their Food Handlers Card, but we go beyond that as apprentices study the ergonomics of the cooking environment. Chef Apprentices learn to keep the village well fed in an ongoing celebration of local foods, health and nutrition.

Mise en place - The Ecology of Kitchen Survival
The French concept of a highly organized kitchen is more than a process for cooking, it is way of awareness and life. The ecology of kitchen survival requires a sharp and thoughtful mind. In a Wilder kitchen you have a huge diversity of ingredients available to you where truly wild tastes push the edges of flavor and root us deeply in nourishing traditions.

How it Works

One weekend a month, apprentices train in the field at our epic outdoor locations. Four of those weekends are Friday - Sunday overnight expeditions.

Overnight Weekends:
Check-in between 4:30 and 5 PM on Friday and check-out at 3:00 PM on Sunday.
Single Field Days:
Check-in between 8:45 and 9 AM on Saturday, and check-out at 4:30 PM that same day.

Tuition

Tuition is divided into monthly payments after a $75 deposit, or may be paid in full by August 15 for a 5% discount.  

Grade 5 - 8 (Includes 4 Weekend Overnight Trips): Full program tuition is $1,950. Includes: 4 Friday - Sunday overnight weekends, 4 field day Saturdays, Graduation family field day, optional family holiday party, Trackers hoodie, access to our weekly family Skills Night, and Mora knife.

Class Schedule

Class is one weekend a month from September to May. Please check these dates carefully, as we are unable to provide credit for missed days.

Tuition

Tuition is divided into monthly payments after a $75 deposit, or may be paid in full by August 15 for a 5% discount.

Grade 5 - 8 (Includes 4 Weekend Overnight Trips): 2017-18 program tuition is $1,950. Includes: 4 Friday - Sunday overnight weekends, 4 field day Saturdays, Graduation family field day, optional family holiday party, Trackers hoodie, and Mora knife. 

Registration

To secure your space for Fall 2017 we require a non-refundable $75 deposit per child. Tuition is divided into nine equal payments which will be charged on the first of the month from September through May. A 5% discount will be applied for tuition paid in full by August 15, 2017.  

Please note that registrations are for the entirety of the program; however, we do allow for mid-season withdrawals per our cancellation policy (see below). If you are unable to provide your deposit now due to financial hardship, please contact us directly so we may make alternate arrangements. Limited scholarships are available in cases of financial need; please see our scholarship page for deadlines and application information.

Cancellation and Withdrawal Policy

Because of our small group sizes, we are greatly impacted by mid-session cancellations and withdrawals. Please carefully look at the calendar dates above and weigh well if this is a commitment that fits with your family's schedule and needs. Nevertheless, we understand that the needs of families may change during the year. Our cancellation policy is as follows:

  • We request a two-week courtesy notice prior to withdrawals.
  • For all withdrawals from apprenticeship programs, a withdrawal fee equal to one monthly payment will apply.
  • After the withdrawal fee has been subtracted, we will refund any pre-paid tuition prorated for time not attended.
  • We cannot offer credit for program days due to illness, family vacations, etc.
